This smoked tuna stew is very easy and rewarding.

All you need is

a big fat smoked tuna, cut into chunks,

tomatoes,

a few aromatics like onions and garlic,

carrots, and seasoning of choice (I used chicken stock cube and nutmeg, but you can go with your flow).

I believe what makes this dish is the aromatics and the carrots which are added later and gets sweetened.  You got an earthly sweet taste from the smoked tuna, carrots and onions.

Ingredients
  • 1/4cup/ 60ml vegetable oil
  • 4 cloves garlic minced/ grinded
  • fresh pepper minced/ grinded
  • 3 large/ 1lb onions sliced
  • 1.5lb fresh tomatoes diced
  • 1 teaspoon shrimp powder optional
  • 1 chicken stock cube
  • 2 heavy dashes of freshly grated nutmeg
  • 1 whole smoked tuna cut into chunks (over 1.5lb of fish)
  • 1 lb carrots cut into desired sizes
  • salt as required
Instructions
  1. Pour 1/4 cup vegetable oil into a saucepan on fire. Add minced garlic and pepper. Stir continuously till oil is hot and fragrant.

  2. Add sliced onions and stir often till softened and barely caramelised. Add diced tomatoes, shrimp powder, 1/2 teaspoon salt, chicken stock cube and two heavy dashes of freshly grated.

  3. Stir in smoked tuna chunks. Cover and simmer for eight to ten minutes. Stir in carrots and simmer for about 5 minutes or till carrots are softened. Check and adjust for salt. Serve with any side like plain rice, boiled yam, fried plantain etc.
