This smoked tuna stew with chunks of smoked tuna and tender carrots and stable ingredients like onions and tomatoes, this is a very easy meal that is sure to please everyone.
Pour 1/4 cup vegetable oil into a saucepan on fire. Add minced garlic and pepper. Stir continuously till oil is hot and fragrant.
Add sliced onions and stir often till softened and barely caramelised. Add diced tomatoes, shrimp powder, 1/2 teaspoon salt, chicken stock cube and two heavy dashes of freshly grated.
Stir in smoked tuna chunks. Cover and simmer for eight to ten minutes. Stir in carrots and simmer for about 5 minutes or till carrots are softened. Check and adjust for salt. Serve with any side like plain rice, boiled yam, fried plantain etc.
