Chocolate covered oats biscuits

Ingredients
  • 1/3cup/ 75g butter or margarine
  • 1/3cup/71g light brown sugar
  • 1 cup/ 90 quick cooking oats
  • 3/4cup/ 90g pastry flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon milk
  • 1/2 teaspoon honey
  • Pinch of salt
  • Chocolate bar and margarine/ butter for spreading
Instructions
  1. Preheat oven to 180°C or 350°F. Line a baking tray with baking parchment. Whisk flour, baking powder, salt and oats together.

  2. In a mixing bowl, beat margarine or butter and sugar together. Add in honey and milk. Add the dry ingredients and mix until well combined. Spoon about tablespoon full onto a baking tray and  press lightly.

  3. Bake in preheated oven for 10 to 12 minutes, or until golden brown and it smells like toasted oats. It will be soft, leave to cool on the tray and it will firm up and become crunchy.


  4. Melt chocolate with butter or margarine. Spread on biscuits and set aside to harden. If you want the square design, use a table knife to lightly cut across the biscuits when the chocolate has hardened. Store in an air tight container for three to four days.
