Meanwhile let’s talk smoked tuna and cabbage today.

This is a very easy and homely tuna cabbage stew. The smoked tuna gives the stew this unusual smokey taste. For maximum flavour and taste, buy freshly smoked tuna. I know the market women will tell you it is fresh when it i has been lying in their stalls for about two weeks. Watch out for the ones that is not very dried. The very dried ones have been smoked over and over again till it is bought. Yes, I have stayed with fish mongers before.

If you do not want troubles, go with tuna in canned oil, tuna in water does not work well for this recipe. I normally use canned tuna when there is no smoked tuna.

We start of by sauteing onions, garlic and tomatoes. Then we add in cabbage and tuna and seasoning (rosemary, pepper and salt) simmer for 10 to 15 minutes depending how you like your cabbage, tender or crunchy.

It is easy and simple. It goes well with rice cooked with margarine or butter or puna yam.

Ingredients
  • 1 medium sized smoked tuna
  • 1 medium sized cabbage
  • 2 medium sized onions
  • 8 tomatoes
  • 2 cloves garlic
  • 1/2 - 1 teaspoon rosemary
  • 3-4 tablespoon vegetable oil
  • Salt and pepper as required
Instructions
  1. Dice tomatoes, slice onions, crush or chop garlic and cut cabbage into desired sizes. Break tuna into desired sizes.

  2. Heat oil in a saucepan on medium heat. Add in onions and garlic, frying till onions are translucent. Add diced tomatoes, pepper and rosemary and let it cook for about 5 minutes.

  3. Add tuna and cabbage and simmer for 10 to 15 minutes. Taste and adjust for salt.
