These baked chicken drumsticks are so good. Seasoned with a spicy combination of ginger, garlic, paprika, pepper flakes, nutmeg cumin, black pepper and brown sugar, the brown sugar gets caramelized when done and creates a unique burnt caramel taste with the spices.

Spicy caramelised bake chicken drumsticks

this is a winner, great for entertaining. You will need a few spices from your cabinet, combine them together. Pour over chicken, let it rest for a while and just get baking.

Ingredients
  • 6 chicken drumsticks (about 2 lbs) cleaned and patted dry
  • 3-4 cloves garlic finely minced
  • 1 teaspoon grated ginger
  • 1 tablespoon brown sugar
  • 1/2 tablespoon paprika
  • 1/2 tablespoon pepper flakes
  • 1 teaspoon grounded black pepper
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon grounded cumin
  • 3/4 -1 teaspoon salt or as required
Instructions
  1. Place chicken into a bowl, combine 3 cloves finely minced garlic, 1 teaspoon of grated ginger, 1 tablespoon brown sugar, 1/2 tablespoon paprika and red pepper flakes, 1 teaspoon grounded black pepper, 1/4 teaspoon cumin and nutmeg and salt as required. Mix well to combine, cover with plastic and set in the fridge for 1 hour or overnight.
  2. When ready, preheat oven to 200°C or 400°F. Lightly brush a sheet pan or baking tray with oil. Place chicken drumsticks on sheet pan or baking tray leaving spaces in between them.

  3. Bake for 20 minutes, remove from the oven, turn and bake on the other side for 10 to 15 minutes (this is to get caramelized around each side) or until done. Serve.
