Omo tuo is a Ghanaian side dish made by cooking rice till it is very soft. The rice is then beaten or mashed with a wooden ladle to make it glutinous and formed into a ball.

Ingredients
  • 1 cup rice
  • 3-4 cups water or as required
  • salt as required
Instructions
  1. Rinse rice and put in a medium cooking pot. Add water and salt to taste.

  2. Put rice on high heat and bring to ball. When rice boils over, reduce heat to medium and let cook till all water is absorbed and very soft when pressed between your fingers. Turn off heat.

  3. With the rice in the cooking pot, use a wooden ladle to beat or mash the rice against the sides of the pot for it to be glutinous. Divide the glutinous rice into balls according to required serving. Serve with soup of choice.

Recipe Notes

You might need only 3 cups of water for the 1 cup of rice depending on the brand of rice. However, if the rice is not soft after all the water has been absorbed from cooking, add a half or more cup as needed.
