Vegetables stir-fry with pasta

Quick and easy vegetables stir-fry with pasta, a very light and tasty stir-fry.

Meet what my mother calls food for the lazy hands AKA pasta/ noodles or the most popular one now INDOMIE. (It’s a cultural thing) 

I like to reason with her. 

You know there’s cutting of the vegetables. Argh…. there is the washing of dishes afterwards. And then the nightmare of over-cooking pasta and getting it all stacked together. 

Now to this vegetable stir-fry with pasta. It is quite straightforward. Feel free foraging through the fridge for any “not-so-forgotten” or “ignored” vegetables, or better still your favourite vegetables. Just cook your pasta or noodles, throw everything together and yes the sauce. A simple combination of soy-sauce and honey.

Ingredients
  • 150g pasta
  • salt as required
  • 2-3 carrots
  • 1 small cauliflower
  • 2 bell pepper
  • 1 red onion
  • 2 tablespoons soy sauce
  • 1/2 tablespoon honey
  • 2 tablespoons vegetable oil
  • 1- 2 cloves garlic finely minced
  • 1- 1.5 teaspoon grated ginger
  • 1/2- 1 teaspoon red pepper flakes
  • 1/8 teaspoon white pepper optional
Instructions
  1. Bring water to a boil, add a generous amount of salt and add pasta. Cool till al-dente. Strain with a colander and set aside. Meanwhile cut your vegetables into desired sizes. Mix the soy sauce and honey together, set aside.

  2. Add oil into a frying pan with the sides up. Add minced garlic and ginger and fry till fragrant.

  3. Add the vegetables, white pepper and half of the soy sauce. Stir, cover and cook till vegetables have reached desired tenderness. Add the pasta, stir and add the remaining sauce if desired. Serve hot.
