Easy and delicious slice and bake cinnamon cookies (biscuits)
Flour, margarine and sugar are stable ingredients in our homes, even for those who hardly bake. Combining these three, you can get any good baked good you want. Adding a little spice or essence and you sure to win hearts with your baked good.
This slice and bake cinnamon cookies or biscuits uses just four ingredients; flour, margarine, brown sugar and a touch of cinnamon. The smell from the cinnamon as these biscuits bake in the oven is warming. The best thing about these is, the dough is rolled into a log, slice and bake when ready. No rolling of dough but just a little patience to get the dough to firm up in the fridge for slicing.
- 1 cup / 226g margarine
- 1/3 cup / 70g brown sugar
- 2 ¼ cup / 288g pastry flour
- 1 teaspoon cinnamon powder

Sift cinnamon and flour together, set aside.

In a large bowl beat margarine and brown sugar together until light and fluffy.

Gradually add in flour and cinnamon mixture and until mixture leaves sides of the bowl, forming a smooth dough.

Divide dough into two and shape into a log. Wrap in a rubber and refrigerate for two hours or overnight.

Preheat an oven to 190C.

Using a sharp knife, cut dough logs into about ¼ inch slices.

Place on a prepared baking pan and bake for 10-15 minutes.

Sprinkle with cinnamon and let it rest on pan for about 5 minutes and transfer to cooling rack to cool completely.
The biscuits are done on the 10th minute but soft. For crunchier biscuits bake for an additional 5 minutes.
