This minced meat stew is totally delicious; with just a few stable pantry ingredients, this stew comes together quickly and it is very rewarding.
Let me introduce to you, my go to stew. Rich, tomatoes and beef sauce. The kind, that you just snap your hand and food is ready: minced meat stew. All you need is ground beef commonly referred to as minced meat here. The rest are stable pantry ingredients; onions, garlic, tomatoes, ginger, pepper, oil, stock cube etc
This minced meat stew is great with rice, pasta, yam, sweet potatoes and a great base for gari foto.
I normally tend to serve with damp gari or just to make gari foto which is way faster. Very tasty.
The minced meat stew is great as it is. If I am in the mood for just a little bit of spice, I add grounded fennel seeds and curry powder just when I add the blended onions and tomatoes mix.
- 1 lb/ 500g minced meat/ ground beef
- 1/2 - 1 teaspoon grounded grains of paradise/ black pepper
- 1/2 teaspoon adobo seasoning or any all-purpose seasoning
- salt as required
- 6-8 plum tomatoes
- 3 onions
- 2 cloves garlic
- scotch bonnet pepper as required
- 1/4inch ginger optional
- 4 tablespoons vegetable oil plus more as needed
- 1 small bay leaf
- 1 teaspoon adobo seasoning or chicken stock cube optional

Season minced meat or ground beef with grounded grains of paradise or black pepper, 1/2 teaspoon adobo seasoning or any all-purpose seasoning and salt. Set aside.

Blend tomatoes, onions, scotch bonnet pepper, garlic and ginger if using together, set aside.

Put two tablespoons of oil in a medium saucepan on fire. When hot, add seasoned minced meat or ground beef. Stir occasionally for about four minutes till no longer pink. Remove from saucepan and set aside.

Add two tablespoons or more of oil as needed. Add one small bay leaf and the blended onions and tomatoes mixture. Add one teaspoon adobo seasoning or chicken stock if using. Cover and simmer for ten to twelve minutes till cooked through or no longer tasting raw.

Add minced meat, taste and add salt if needed. Serve with rice or boiled yam.
