Garlic chicken pasta: garlic and green chilli comes together in this chicken with pasta rewarding you with a beautiful tasty dish on a lazy day.

How is the week going? Too hot?, too cold?, holding on? I am very excited this week as I will be meeting some friends this weekend. The last time we saw ourselves was somewhere 2016 and I can barely wait to see them.
Garlic chicken with pasta, is on the agenda today. Any garlic lovers around here?
This garlic chicken and pasta has all sorts of flavours; the head boss garlic, green chilli, white wine and parley. This is one beautiful and tasty meal that comes together quickly. It is like just throw in whatever you have and you good to go.
We start by throwing garlic, green chilli and salt onto chicken stripes. Then we go ahead and cook our pasta in a generous amount of salted water (salt is important when cooking pasta you know). And since we do not have time, we go ahead and start cooking the chicken. We cook it on both sides in oil, remove from the pan, add another oil and add more garlic (there is nothing like enough garlic is there?)
Then, the white wine, chicken and pasta.
Not forgetting parsley, it completes the dish!
- 250g/ 1/2pound boneless chicken cut into stripes
- 3 cloves garlic finely minced
- 1 green chilli deseeded if needed and finely minced
- salt as required
- 250g pasta
- 4 tablespoons olive oil
- 2-3 cloves garlic finely minced
- 1/4cup/ 60ml white wine
- 2-3 stalks parsley chopped
- black pepper as required

Season chicken with garlic, green chilli and salt and set aside. Bring water to a boil in a large saucepan, add a generous amount of salt and pasta. Boil pasta but it should be barely cooked through. It should be firm.

While the pasta is cooking, heat two tablespoons oil in a pan and put in the chicken pieces. Cook on both sides and remove from the pan when it is barely cooked.

In the same pan, put in another two tablespoons oil and the other minced garlic. Stir till it fragrant, add the white wine and chicken and cook for three to five minutes.

Transfer the partially cooked pasta from the boiling water into the pan with the chicken. Add about 1/4 cup of the pasta water into the pan. This will finish cooking the pasta and form a thick sauce coating the pasta.

Check for salt (it might not be needed) and add black pepper if desired. Turn of heat and stir in parsley. Serve.
