Easy baked fish fillets with sweet potatoes

Some people in my house are in some kind of fish season in anticipation for Easter. As for me, anything goes. It’s hunger that’s calling…..

Oh goodness! you have to try this baked fish fillets with sweet potatoes. The fish is seasoned with garlic, parsley, paprika and black pepper. The first time I made it, I just threw in almost all dried herbs in the cabinet. It ended up on the extreme side. (I can imagine my youngest sister saying I came to eat food not medicine). Redoing it, I went with just parsley.

We start with the sweet potatoes. These ones are tossed with chilli, onions and black pepper. Meet sweet + spice. Then we arrange them nicely on the baking tray. Bake them, whiles we marinate the fish fillets. You know fish cooks faster so we add them midway or almost when the potatoes are done baking. Bake them together and serve.

The potato will be soft in the inside and crisp on the edges, the onions will be sweetened and the fish fillets….just delicious!

Ingredients
Sweet potatoes
  • 1-1 1/2 pounds sweet potatoes skin-on
  • 1 onion
  • 2 tablespoons olive or sun flower oil
  • fresh chilli as required
  • salt
  • grounded black pepper as required optional
Fish
  • 4 fish fillets I use sea bass
  • 1 clove garlic minced
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon sweet paprika
  • salt and grounded black pepper as required
  • 1 tablespoon olive or sun flower oil
Instructions
  1. Pre-heat an oven to 200°C or 390°C and line a tray with baking paper to make cleaning easier.

  2. Scrub the potatoes to remove all dirt or peel the potatoes to remove the skin. Cut into small cubes. (Smaller cubes bakes faster). Slice an onion and add to sweet potatoes. Grate desired amount of chilli onto potatoes, drizzle with oil, add salt and black pepper. Toss together and spread on the baking tray. Place the baking tray inside the pre-heated oven to bake.

  3. Whiles the potatoes are baking, mix parsley, paprika, garlic, salt, black pepper and oil together on a flat plate. Place the fish fillets in the spice blend to coat, both the inside and the skin covering. Place on a plate to marinate. Marinate for about 20 minutes.

  4. After the sweet potatoes have baked for about 20 to 30 minutes to almost cooked through, place the fish fillets on top with the skin side facing up. Spread any remaining marinade on top. Place the baking tray back into the oven and bake for about 8 to 12 minutes till the fish fillets are cooked through together with the potatoes. Serve.
