This is an improved version of my mother’s dandelion, cucumber and tomato dressing free salad which I honestly struggle to eat.
This salad is made up of cucumbers, tomatoes, onions, mint leaves and parsley. The mint leaves and parsley are the stars of this salad as it curbs the confusing savoury and sour taste of tomatoes which I find difficult eating on its own. The dressing is a simple one of olive oil, lemon, honey and salt which you can easily adapt to suit you.
Shout out to all who take tomato and just bite into it! It is my dream to do same.

- 1 large cucumber
- 3 medium size tomatoes
- 1/4 medium size white onion
- 2 tablespoon chopped mint
- 2 tablespoon chopped parley
- 1-2 tablespoon olive oil
- 1/2 lemon juiced
- 1 tablespoon honey
- Salt as required

Slice cucumber, tomatoes and onions into a salad bowl. Stir in mint and parley. When ready to serve, drizzle salad with dressing, taste and adjust salt if needed.
Adding the dressing in early, makes the tomatoes too juicy. Add in when ready to serve.
