This is it! Big salads, big flavours, fully satisfying.  This chicken avocado salad is just superb with a ton of flavours coming from the chicken. 

The chicken is marinated in red onions, garlic, dried oregano, paprika, chilli powder, cumin, black pepper,  sea salt and freshly juiced lemon. The combination is so good, I will make it for kebabs when the rains go away. 

You can use whatever vegetables of choice. But don’t skimp on the crunchy lettuce. We all need some crunch in our lives. Skip the tomatoes if it isn’t your thing, add some bell peppers and cucumbers, your taste buds will be glad.

Ingredients
  • 250g/ 1/2 lb chicken breast
  • 1/4 red onion finely chopped
  • 1-2 cloves garlic finely minced
  • 1/4 teaspoon each dried oregano, chilli powder and paprika (smoked or regalar)
  • 1/8 teaspoon grounded cumin
  • sea salt and black pepper to taste
  • 1 teaspoon freshly juiced lemon
Salad
  • 2 cups lettuce
  • 2 tomatoes diced
  • 1 big avocado pear diced
  • 1/4 red onion
Salad dressing
  • 1 tablespoon freshly juiced lemon
  • 1 tablespoon olive oil
  • sea salt and black pepper to taste
Instructions
Chicken
  1. Wash the chicken and pat dry. Split breasts into two or more if it is too thick. Add finely chopped red onion, minced garlic, 1/4 teaspoon each of dried oregano, paprika and chilli powder. Add 1 teaspoon freshly juiced lemon, sea salt and black pepper to taste.

  2. Set in the fridge to marinate for 30 minutes or overnight. When ready to cook, heat a pan or skillet with oil. When hot, place the chicken in the pan to cook on both sides till cooked through or to taste. (Cooking time will depend on the thickness of the chicken breast.) Remove from the grill, place on a chopping board to cool for 5 minutes or more and slice into desired sizes.

Salad
  1. Prepare salad dressing by combining 1 tablespoon olive oil, 1 tablespoon lemon juice, black pepper and sea salt together, set aside.

  2. Arrange lettuce in a bowl. Top with diced tomatoes, avocado and red onions and cooked chicken, drizzle with salad dressing and serve.
