Nothing beats a classic beef stew over rice. The luscious tomato gravy over tenderly well seasoned fried beef. I love beef or I just love food.

Ingredients
Beef
  • 1 kg beef
  • 4 cloves garlic
  • -1 1/2 tablespoon grated ginger
  • ½ medium sized onion
  • ¼- ½ teaspoon grains of paradise or substitute for black pepper
  • 1-2 teaspoon salt
Stew
  • 12-14 plum tomatoes
  • 3 large onions
  • Pepper as required
  • 3 tablespoon tomato paste (optional)
  • 1 cup vegetable oil
  • 1 bayleaf
  • ½ teaspoon curry
  • Salt as needed
  • Optional: Sliced onions and green bell pepper
Instructions
  1. Cut and wash beef and put in saucepan, grind marinate spices and put on beef. Put on high heat and cook till tender. Add water when cooking as and when needed. Whiles the beef is cooking, blend tomatoes, onions and pepper, set aside.

  2. When beef is done cooking to desired tenderness, heat oil in a saucepan. When the oil is hot, fry the beef. Remove beef from oil when done.

  3. Add bay leaf. blended tomatoes, onions and pepper and bring to a simmer. Whiles simmering, add tomato paste if using, curry,  beef stock from cooked beef and let simmer till it thickens. Add fried beef sliced onions and bell pepper if using, simmer for about three to five minutes, check and adjust salt if needed. Serve with any carbohydrate dish for a full meal.
