Easy easy avocado tuna salad.
Our neighbour has a huge avocado tree which has been providing me with shade when I am waiting for a trotro (car). Well the tree has not only been providing me with shade, it has been producing nice and tasty avocados. Let just say thank you to my generous neighbour for growing that avocado tree.
This is a very easy, simple and tasty avocado tuna salad. It is filling as well. A little goes a long way. You need a can of tuna flakes in olive or sunflower oil. I think tuna in water might work but it tends to be bland. So if going for that, do season it well for maximum taste.
Other ingredients for this avocado tuna are tomatoes, red onions, lemon juice for a little tanginess and also to keep the avocados looking fresh. Getting them brown won’t look good for the eyes, not to talk up putting it in the mouth…
After cutting the vegetables, toss with the lemon juice, toss with black pepper and salt. Then finally pepper flakes, the more heat the better!
Here’s the recipe for avocado tuna salad;
- 1 can/ 185g tuna in sunflower/ olive oil
- 1 large/ 2 small avocado
- 4 medium tomatoes
- 1/2 medium onion
- 1/4 teaspoon grounded black pepper
- 1/2 - 1 teaspoon pepper flakes
- 1/2 lemon juiced
- Salt as required

Using a colander, drain oil from tuna and gently flake tuna. Set aside.

Cut the tomatoes, avocado and onions into desired sizes. Put everything into a bowl, add in lemon juice.

Toss in pepper flakes, salt and black pepper, stir and serve.
