Garlic and green chilli comes together in this chicken with pasta rewarding you with a beautiful tasty dish.

Ingredients
Chicken
  • 250g/ 1/2pound boneless chicken cut into stripes
  • 3 cloves garlic finely minced
  • 1 green chilli deseeded if needed and finely minced
  • salt as required
The rest
  • 250g pasta
  • 4 tablespoons olive oil
  • 2-3 cloves garlic finely minced
  • 1/4cup/ 60ml white wine
  • 2-3 stalks parsley chopped
  • black pepper as required

Instructions
  1. Season chicken with garlic, green chilli and salt and set aside. Bring water to a boil in a large saucepan, add a generous amount of salt and pasta. Boil pasta but it should be barely cooked through. It should be firm.

  2. While the pasta is cooking, heat two tablespoons oil in a pan and put in the chicken pieces. Cook on both sides and remove from the pan when it is barely cooked.

  3. In the same pan, put in another two tablespoons oil and the other minced garlic. Stir till it fragrant, add the white wine and chicken and cook for three to five minutes.

  4. Transfer the partially cooked pasta from the boiling water into the pan with the chicken. Add about 1/4 cup of the pasta water into the pan. This will finish cooking the pasta and form a thick sauce coating the pasta.
  5. Check for salt (it might not be needed) and add black pepper if desired. Turn of heat and stir in parsley. Serve.
