Pineapple coleslaw

Last Christmas, my little sister suggested we add pineapple when making the regular no one seems interested coleslaw.

I was honestly not interested but I went with it and…….. I was charmed by the first bite.

It is the regular coleslaw with pineapple. Cabbage, carrots, added white onions and the ultimate pineapple.

Once you have try coleslaw with pineapples, you would not go back.  Do you like coleslaw? What additions do you put in?

Pineapple cole slaw
Servings: 4 as a side salad
  • 1 small cabbage shredded
  • 1 large carrots grated
  • 1/4 white onion sliced
  • Chopped pineapple about 1/2 cup
  • 5 tablespoons mayonnaise
  • 1/8 teaspoon black pepper adjust to taste
  • 1/4 teaspoon salt adjust to taste
  1. Combine carrots, cabbage, pineapple and pineapple in a bowl. Mix mayonnaise, salt and pepper together. Add to salad mix. Serve

  1. LUSH! Would go great with my mum’s rice salad we have for Christmas parties (well any party to be honest!) I love pineapple, will definitely be trying this! x

  2. Coleslaw is one of my favourite salads and I love the fact that it will keep happily in the fridge for a couple of days. The recipe I inherited from my mum uses spring onions rather than white – I like these as they are milder, add a splash of green and don’t impact your breath as badly! My contribution to our recipe is that I make the dressing by mixing a tangy mayonnaise with a little orange juice (if the mayo is a little ‘soft’ I also add some lemon juice). I think maybe my orange has a similar impact to your pineapple – acting as a foil to the cabbage. I sometimes include orange pieces as well as juice.
