Healthy banana and oats bars

 

Wait, we are in the fourth week of January and I am sure those of us doing clean eating this year are hanging on. It difficult when there are still left-over from Christmas and it just has to be dropped into our stomachs. If only this clean eating it will last us through the year, so help us God.

My stomach does not do well on sugar and when my mouth betrays my stomach and takes more than enough, ahem, you do not want to go there. Thankfully, with these bars, my mouth can go over board and my stomach will be thankful.

These banana oats bars are dense, sweet from the bananas and honey, perfect snack for anyone and yes it takes few minutes to put together and get done.

Healthy oats bars sweetened using honey and bananas

Ingredients
  • 3 cup medium sized dark spotted bananas almost 1 mashed bananas
  • 1 ½ cup or 135 quick cooking oats
  • ¼ cup vegetable oil
  • ¼ cup honey
  • 1 large egg
  • ½ cup or 48g whole wheat flour
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • ½ teaspoon baking powder
Instructions
  1. Preheat an oven to 180˚ C and grease an 8ˣ8 or 9ˣ9 pan and set aside.
  2. In a medium bowl, stir together the oats, whole wheat flour and baking powder together, set aside.
  3. In a large mixing bowl, mash the bananas using a fork. Add in oil and honey and mix. Stir in salt.
  4. Pour the dry ingredients over the wet ingredients and mix till blended. It will be thick and wet.
  5. Pour in the prepared pan and bake for 16-20 minutes till set and or until a toothpick comes out clean.
Recipe Notes

Bars do not keep well at room temperature. Store in the fridge for about 5 days, .
