Homemade coconut milk

This homemade coconut milk is easy to make. All you need is your coconut fruit, a good blender and a fine sieve.

Ever since my sisters and I discovered coconut milk, there isn’t a week that goes by in our house without making coconut milk. We use it smoothies, oats porridge, cocoa drinks and now we loving it in this coconut rice. My youngest sister drinks it on its own sweetening it with honey. In an overly dramatic fashion, I will say it’s the best milk we have ever had.

If you have never had coconut milk, I will ask you to please try it, its less expensive to make on your own as compared to the paper ones in the stores which costs about twice or thrice the price of one litre whole or skimmed milk, tastes great and very nutritious. Use it in your oats porridge or smoothies and your taste buds will thank you.

To make coconut milk,
Step 1 : Get a good concrete floor, take coconut fruit, stand upright and throw it hard against the floor. Yes, the unbreakable is now broken. (Me trying to crack coconut most times)

To break the coconut, get a good heavy knife or a small cutlass and hit it around it till it breaks.

Creamy delicious homemade coconut milk

Ingredients
Full cream coconut milk
  • 1 cup or 250ml warm water
  • 1 medium size coconut fruit
Light coconut milk
  • 2cups or 500ml warm water
  • 1 medium size coconut fruit
Instructions
  1. For full cream coconut milk:

    Break coconut and remove coconut fruit from shell. Wash and grate the fruit. Put grated coconut in a blender and add water. Blend for about three times pausing between 60 seconds. Using a double fine sieve, sieve the coconut to collect coconut milk.  NB-You can add another 1 cup OR 1 1/2 cup of water to the pulp and blend again to get a very thin coconut milk. It will be thinner than the light coconut milk.

  2. For light coconut milk:

    Follow the instructions for the full cream coconut milk.

Recipe Notes

Store the coconut milk in the fridge for up to three days.

Coconut milk tends to suspend after being refrigerated, just stir or run it over with warm water when ready to use.

I have seen around you can make coconut flour from the pulp, (dry and blend till smooth) but I am yet to find a use for coconut flour in my kitchen. I normally dry the pulp in the oven on the lowest heat, and use with oats to make biscuits.
