These are certainly irresistible meat balls. My mother was angry with me because she couldn’t stop at one. Most times, the best and most tasty foods come about when it is totally unplanned. I happen to have parsley and green pepper which needed to be used. It had to be immediate because the bell pepper was already on its way to the bin. Searching through the freezer, I found this ground beef which God only knows how long it’s been there.

I added generous amounts of the parsley  and bell pepper to the ground beef, cream crackers because it had been left by my dad on the counter which I know was forgotten. It looked really green and not pleasant before cooking. First taste after frying, was irresistible, I had to do it again for you guys. I love you.

The good thing about these meat balls is that, you can serve it for breakfast (if you in my world), lunch, supper, appetizers, snacks anything. You good to go. Just call friends around.

Ingredients
  • 1 pound ground beef
  • 3 stalks parsley chopped
  • 1/2 onion thiny chopped
  • 1/2 green bell pepper thinly chopped
  • 1 egg
  • 1/4 finely grounded cream crackers
  • 1 garlic optional
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon salt or as required
Instructions
  1. Put all the ingredients in a large mixing bowl. Mix together by hand or a wooden ladle till well blended. Scoop tablespoons full of the beef and roll into balls.

  2. Heat oil in a frying pan enough to fry the beef balls. Put the back of a wooden ladle in the oil. If the oil bubbles around it, then it is hot enough to fry. Put the beef balls one at a time into the oil. Fry till brown and turn the beef to fry on the other side. Fry all till done. The beef is cooked through when it is no longer pink in the inside.
  3. Alternatively, preheat an oven to 180°C or 350°F. Line a baking sheet with baking and arrange the beef balls on the pan. Bake in the oven for 25 to 35 minutes til cooked through.

  4. Serve with your favourite sauce of choice.
